It'd also be worth reviewing the AI builder approach as well.
For the Subject; If the subject users a common structure you could use the 'Split' expression of string related functions to extract relevant data... this might also work for the email body, as you could use the 'HTML to Text' action to remove all the HTML mark-up leaving you with a string which you might be able to reliably extract data from.
