Hello all,
It seems that for Canvas Apps from data will default to phone form factor and there isn't an option to select tablet.
Is there a way to change this?

This is a known issue when creating from data. It will default to phone and there is no real way to turn it to tablet.
I would start with a blank canvas and add data as needed.
If you want all the "extras" that creating from data brings, you can do that and then copy/paste from phone to blank tablet app. It's a pain.
There are some attempts to convert a phone to tablet out there as reflected in this post. You can attempt some of those as well.
But no, what you are seeing is correct.
