I have an issue saving the correct date when submitting a web form and using the "Set Value on Save" option and Type = Today's Date. I am in EST, but when I make a submission after 7pm local time, the item gets saved with a date of today + 1.

I have a site setting item for timezone/id set to Eastern Standard Time but that makes no difference when submitting the web form. Any thoughts?

as a test, have you tried populating the value via JS instead of web form metadata?

Not sure but check the type of Date Time field that you are using (user local etc) as you may get different results for different date behaviours, and also the current timezone setting for the SYSTEM user (as it is the user actually making the update) - use XrmToolBox etc.
