I created a Lookup Value in the CDS Entity to use in an app in powerapps (i have done this before) and now it is not working. The i selected the Entity as Data Source but the field is not showing.

Have you created the relationship with the corresponding entity?
Lookup fields is no longer a selectable type when add new fields for entity, we need to first create a relationship, after that, there would be a lookup field added automatically, check the following article for mroe details:

For fields not displaying, make sure the Lookup fields is set to visible under the form control, more details, check:
