I have dataverse and using patch to update data.
I am getting exception as
An Unknown error occured Server Response:<Exception in ScrubSensitveDataSafe>
What does it mean?

Do you have the appropriate create/update/append to privileges to Event_history_logs and append privileges to Log_item_logs and Events tables?

I don't have any particular suggestions other than to verify the complex column type values you are providing. Are the proper information needed to do the patch?
You might also want to open the monitor tool and look at the specific result information that is coming back from that patch statement.
