A few questions about this trigger. I want to use a generic company email and not my own. Is that possible? And I assume I can trigger this based on a keyword in the subject line. What we have is an outside agency sending a weekly email that is a csv file. We want to automate the process by writing the attachment to a SharePoint library and then I have a scheduled dataflow in Dataverse that will pick up that new file and process it.

Yes the above would work easily.
In the above screenshot, you can add the email of that agency in the From. By this there will be no need to do subject filtering. But still if you want to filter the emails, depending on the subject you can do that.
Also change the option for include attachments to yes.
