I am trying to do an editable gallery about people/attrition management. However, when I try to test the app, changes done are not captured, all the data keeps on resetting to default values.

Could you please post some screenshots of your App ,That will make it much easier to assist.
Do you want to create an editable gallery? Is the problem you encountered is that the Controls always shows the default value?
Maybe you need to set the default property of the Control like this:
