Hello,
I am trying to find if there is any option in Canvas App to capture form level audit similar to the one we have in Model driven App? for example: if a user changes a dropdown value or text value and saves the form, I want to store that specific updated field's Old value & New value in some kind of comment section.

I do this same thing but at the item level in Share Point. In SharePoint you can turn on revision tracking and set it up to 50,000 revisions this will store all the revisions in reverse order and who changed them.
I also setup a form that updates a SharePoint table the gets the user information and the action they did and stores it. the form is hide so just does a submit when moving from form to form.
