First of all, you will have to find out what type of variable you have inside the list. For example if it's a folder list, there are a number of properties to choose from. We admit that the experience here could be improved and this is something we will consider for future releases. For the different properties depending on the list type, you may follow this link https://docs.microsoft.com/en-us/power-automate/desktop-flows/datatype-properties.
For example, I used the Get Subfolders action which automatically created a variable of type folders and since it has multiple values it's a list. So, I then used the Sort List action, selected the Folders variable I got from the action before, and then used one of the properties found in the link above to make my sorting.
